French Canadian Blueberry Toast

French Toast is a great way to start the day and was the typical breakfast to prepare you for a full day of ice hockey among French Canadians. By Derek Stump, Assistant Manager at Divertimenti.

Ingredients

1 loaf (600g) bread, cut into ½-inch (1 cm) thick

3 eggs, slightly beaten

1 cup whole milk

2 teaspoons (10ml) vanilla extract

½ teaspoon (2g) cinnamon

¼ teaspoon (1g) salt

2 teaspoons (10ml) vegetable oil

½ cup (125 ml) maple syrup (Canadian Province of Quebec)

Icing sugar for dusting

1 punnet fresh Blueberries

Serves 8

Method

1. In shallow bowl combine eggs, milk, vanilla, cinnamon, and salt. Dip bread slice into egg mixture, turning to coat. Transfer to a plate.

2. Heat oil in skillet over medium-high heat. Cook slices, about 2 minutes turning once. Transfer to a clean plate. Using a knife cut the slices in half from corner to corner forming 2 triangles.

3. Dip (pour on) in maple syrup, and place on a platter. Garnish with blueberry and sprinkle with icing sugar or add crème fraiche.
